Crispy Ranch Chicken

Who doesn’t have a piece of chicken in the refrigerator or freezer? Not many cooks go without keeping a few pieces in the freezer to help out with family meals.

But, finding a different way to cook the chicken can sometimes become an almost impossible task.

Whether you use this recipe today or one day next week, it gives cooks a quick change to the same old baked chicken dish.

Buttery crackers, a little Parmesan cheese and dry ranch dressing mix perks up a meal that will have the whole family praising the cook.

Crispy Ranch Chicken

3/4 cup crushed Ritz crackers (or similar type)
3/4 cup grated Parmesan cheese
1 envelope ranch salad dressing mix
8 boneless skinless chicken breast halves
1/2 cup butter, melted

In a shallow bowl, combine the crackers, Parmesan cheese and salad dressing mix. Dip chicken in the melted butter, then roll in cracker mixture being sure to coat well. Place in a greased 13×9 baking dish. Bake, uncovered, at 350°F for 45 minutes or until chicken juices run clear.

This flavorful dish can be served with mashed potatoes and a little steamed broccoli or a salad to create a meal that’s balanced and delicious.
